Lemon Chiffon Cookies

Includes amounts for 12 cookies also.
(This single serve recipe has 15 grams of Protein total in the 3 cookies, or consider it 5 grams of Protein per each cookie.)

Ingredients

2 T. THM Baking Blend

1 T. THM Integral Collagen

1 T. THM Gentle Sweet
-
½ T. THM Just Gelatin
-
1 pinch Salt
-
1 pinch Baking Soda
-
1/4 tsp. Lemon Extract
-
1 T. Refined Coconut Oil (melted)

½ Egg
Instructions

Mix dry ingredients together in a bowl. Add liquid ingredients and mix well together.

Divide into 3 balls and press into approximately 1/4” thick cookies on parchment paper on a cookie sheet.

Bake at 350* for 15 minutes. Cool.

Add glaze, spreading with a butter knife or pipe on a crisscross pattern.
Glaze

Mix 1 ½ T of Powdered Gentle Sweet with a small amount of Lemon Juice to get the consistency you are wanting, approximately 1 tsp. of Lemon Juice, but add a little at a time.
